Macaroni in Red Sauce

Al dente macaroni in a homemade red sauce, full of flavor and creaminess. A comforting dish, perfect for enjoying with family and loved by both adults and children.

Ingredients

Main
  • 400 g macaroni (brand of your choice)

  • ½ cup curd cheese or fresh cheese (optional)

  • Paprika

  • Salt

Sauce
  • ½ small Paiteña onion

  • 3 large Roma tomatoes

  • 2 tamarillo tomatoes

  • Vegetable oil

  • Salt and pepper to taste

  • CONDUMIO chili

  • Basil

Preparation

Main
  1. Cook the macaroni according to the instructions on your chosen brand.

  2. In a bowl, place the curd cheese or fresh cheese, salt, and paprika (or annatto) to taste. Begin mashing by hand until the cheese is fully ground and all ingredients are evenly combined.

Sauce
  1. Preheat a pan with a little vegetable oil.

  2. Dice the ½ small Paiteña onion into a fine brunoise.

  3. Peel the 3 large Roma tomatoes and 2 tamarillo tomatoes, and cut them into small pieces.

  4. Sauté the onion until it becomes translucent, then add the Roma and tamarillo tomatoes.

  5. Season with salt and pepper to taste and cook until the ingredients are fully done.

  6. Transfer the mixture to a blender and blend until it reaches a sauce-like consistency.

  7. Return the sauce to the pan and add CONDUMIO chili to taste. Stir over low heat for a few minutes.

  8. Add basil leaves to taste.

Plating

  1. Place the cooked macaroni in a deep plate.

  2. Pour the prepared sauce over the macaroni.

  3. Top with a portion of the mashed cheese or fresh cheese to taste.
